Pasta cooked al-dente will leave you fuller for longer than soft pasta.


When you cook pasta for a long time, the sugars inside are completely broken down, allowing them to be absorbed quickly into your bloodstream. This sudden rise in blood glucose causes a large insulin response, making you feel hungry and lethargic soon after eating. By eating pasta that's al-dente, this increase in blood glucose is much more gradual, as the body has to break down the sugars before they can be absorbed, leaving you fuller longer.
